The coastal town of Newport, Oregon, home to Rogue Spirits and Rolling Thunder Barrel Works is a special place. Every day we breathe in the salty ocean air, listen to the crying gulls and barking sea lions, and watch as fishermen sail out to the Pacific in search of the day’s fresh catch.
If only you could bottle this… Well, that’s exactly what we did.
The Secrets Of Ocean Aging
A barrel is like a lung. As it expands and contracts, it breathes in a little bit of the air that surrounds it. This process, called micro-oxygenation, helps the whiskey soak in the flavors of the wood. Whiskey gets 60%-70% of its taste, and all of its color, from the barrel.
Because of the mild climate here in Newport our barrels breathe slowly. Ocean aging is mellow and unhurried.
Just as we breathe in the salty air of Newport, so do our barrels. Over the months and years, this imparts a unique quality to our ocean aged whiskeys that you can’t get anywhere else. Some distilleries will load their barrels onto ships and send them sailing to try to get the same effect. All we have to do is open the doors and the windows, and let Mother Nature do the work for us.
In the end it’s all about terroir. If we were to age our whiskeys somewhere else, they’d taste different, even if we used the same ingredients, same recipes and same methods to mash and distill them. We like knowing that in every bottle of a Rogue Spirits ocean aged whiskey is a little bit of the salt air and terroir of our hometown of Newport, Oregon.
