Single Malt Summer

Die-hards insist that the only way to enjoy a single malt whiskey is on the rocks or maybe with a splash of water. But did you know that until the 1800s, most scotch whiskey was served as punch? Today whiskey punch is the rage in the land of Auld Lang Syne.

Ingredients:
2 oz. Oregon Single Malt Whiskey
1 oz. fresh lemon juice
1.5 oz Rhubarb, Ginger and Honey Syrup
1 handful Summer berries (raspberries, strawberries, blackberries
Ginger ale

Preparation:
Pour all ingredients except the ginger ale into a glass filled with one-third crushed ice. Stir lightly. Top with a splash of ginger ale. Garnish with orange wedge, mint sprig and summer berries.

Marionberry Collins

While most recipes call for raspberries, we prefer the slightly tangy flavor of marionberries. Now that fresh berries are appearing at farmers markets, there’s no better time for a Marionberry Collins.

Ingredients:
2 fresh marionberries
.25 oz. simple syrup
2 oz Spruce Gin
1 oz. fresh lemon juice
1 oz. club soda

Preparation:
Muddle the marionberries and simple syrup in a glass. Add Spruce Gin, lemon juice and stir. Fill with ice and top with club soda. Garnish with lemon, mint sprig or marionberries.
