We distill our Hazelnut Spice Rum with the nuts grown by our neighbors at Kirk Family Filberts. They live next door to us at Rogue Farms in Independence, Oregon.
We roast their filberts in small batches at the Rogue Distillery in Newport and, while they’re still warm, place them in an infusion sack along with some botanicals and spice. Then we hang the bag in the column so the spirit picks up the flavor of Hazelnuts, vanilla bean, cinnamon, ginger, nutmeg, clove and orange peel as it vaporizes through the still.
