A Taste Of (Real) Honey

Time to let you in on something.

We’ve been experimenting with honey spirits. Not much to say beyond that.

Distilling with honey is tricky because it’s easy to lose the taste of the honey during distillation. So we’re trying out different ideas to see if we can craft a high quality spirit and retain the golden, honey flavor.

One thing. When we do finally create a honey spirit, it will be made with real honey, produced by the Rogue Farms Honeybees at our apiary in Independence, Oregon. Not all spirits makers can make that promise.

The harvest of Rogue Farms honey takes place in August. Precise dates determined by nature, weather and the honeybees. Rogue Spirits with honey will have to wait until the bees are done. Meanwhile we’ll keep tinkering.
