Shucking Your Own Corn

Tygh Valley, OR – Revolutions are hands on operations. When you grow your own, you need to be resourceful. When we decided to grow our own corn, we knew we were going against the grain. So it was no surprise that when it came to harvesting and processing our own Wigrich Corn, it was all hands on deck. As the corn came in off the field, our Grow Hut interns were ready to collect and shuck the ears.

Hand shucking our corn is part of the DIY (Do It Yourself) philosophy of Rogue Farms.  Each of the 5,400 ears were inspected by hand and by sight as they were being shucked.  Those that did not meet with our demanding standards were tossed aside and the good ones were moved along to the next step of the process, shelling and floor malting.  It’s more time consuming to do it this way, but this kind of hands on attention helps us grow, pick, shuck, shell and floor malt better ingredients for our beers and spirits.

 

When our Wigrich Corn is ready for floor malting, we are in truly uncharted territory.  Corn is a challenging grain to floor malt.  Most brewers and distillers use corn flakes or torrified corn.  There is no information, no manuals, on how to floor malt corn.  So, we learn by doing.  We began experimenting with test batches of floor malted corn months ago, trying out various techniques until we figured out how to do it right.

 

We are floor malting our corn because, just like how we shucked it, floor malting is a hands on process.  From steeping to germinating, to flipping, raking, kilning, and bagging we touch, see and sniff our corn malt every step along the way.

 

When we’re done the Wigrich Corn that we shucked, shelled and floor malted by hand at the Farmstead Malt House in Tygh Valley will go to the Rogue Brewery and Distillery in Newport, Oregon where we will  mash, ferment, ocean age and hand bottle our first ever batch of Rogue Spirits Sweet Corn Bourbon.

 

It’s too early to know when Sweet Corn Bourbon will be available.  But when it is, you’ll be able to open a bottle and taste the difference it makes when you grow spirits from scratch.
